For the Crust:

  • 1 cup (2 sticks) unsalted butter, softened

  • 2 cups all-purpose flour

  • ½ cup brown sugar

  • Pinch of salt

For the Cheesecake Layer:

  • 16 oz (450 g) cream cheese, softened

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the Apple Layer:

  • 2 large Granny Smith apples, peeled and diced

  • 2 tbsp brown sugar

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • 1 tbsp lemon juice

Instructions

1️⃣ Make the Crust

  1. Preheat oven to 350°F (175°C).

  2. In a medium bowl, mix butter, flour, brown sugar, and salt until crumbly.

  3. Press evenly into a parchment-lined 9×13-inch baking pan.

  4. Bake for 10–12 minutes, then cool slightly.

2️⃣ Prepare the Cheesecake Filling

  1. Beat cream cheese and sugar until smooth and creamy.

  2. Add eggs and vanilla extract, mixing until just combined.

  3. Pour the mixture over the warm crust.

3️⃣ Add the Apple Layer

  1. In a small bowl, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.

  2. Spread evenly over the cheesecake layer.

4️⃣ Make the Streusel Topping

  1. Mix flour, oats, and brown sugar.

  2. Cut in butter until crumbly.

  3. Sprinkle over the apples.

5️⃣ Bake and Chill

  1. Bake for 30–35 minutes, or until the center is set.

  2. Cool completely at room temperature, then refrigerate for at least 2 hours (overnight for best results).

6️⃣ Serve

  1. Cut into squares.

  2. Drizzle each bar with warm caramel sauce before serving.

  3. Enjoy chilled or slightly warmed!

Notes

  • Use room temperature cream cheese for the smoothest filling.

  • Chill before slicing for clean edges.

  • For a salted caramel version, sprinkle a pinch of sea salt flakes on top before serving.

  • Want to save time? Substitute canned apple pie filling for the fresh apple layer.

  • Freeze leftovers in airtight containers for up to 2 months — thaw in the fridge overnight.
