Ingredients

2 slices sourdough or brioche bread

2 tbsp butter or mayonnaise

½ cup fresh or frozen blueberries

1 tsp honey

½ tsp lemon zest

3 slices brie or gouda cheese

Optional: cream cheese spread or blueberry jam
Instructions

Prepare filling: In a small pan, heat blueberries, honey, and lemon zest until berries burst and mixture thickens. Cool slightly.

Assemble: Spread butter on the outside of the bread slices. Layer cheese and blueberry mix on the inside.

Grill: Toast on medium heat for 3–4 minutes per side until golden and crispy.

Rest & serve: Let cool 1 minute before slicing for cleaner edges.

Swap brie for mozzarella for a milder flavor.
