A perfect blend of sweet, salty, and creamy, these Honey Feta Sweet Potato Rounds are simple to make and impossible to resist.
The crispy roasted sweet potatoes, crumbly feta cheese, and drizzle of honey come together in an appetizer that looks as good as it tastes.

  • Total Time: 40 minutes
  • Yield: 23 servings 1x

Ingredients

Scale

🥔 For the Sweet Potato Rounds:

  • 2 large sweet potatoes, scrubbed and sliced into ½-inch thick rounds

  • 2 tablespoons olive oil

  • ½ teaspoon sea salt

  • ¼ teaspoon black pepper

🍯 For the Toppings:

  • ½ cup crumbled feta cheese

  • 2 tablespoons honey (preferably raw or wildflower)

  • 1 tablespoon chopped fresh thyme or rosemary

  • Optional: chopped pecans, pistachios, or walnuts for crunch

Instructions

1. Preheat and Prepare

  • Preheat oven to 400°F (200°C).

  • Line a large baking sheet with parchment paper.

  • Slice the sweet potatoes into ½-inch thick rounds (no need to peel).

  • In a large bowl, toss the slices with olive oil, sea salt, and black pepper until evenly coated.

💡 Tip: For crispier rounds, pat the slices dry with a paper towel before tossing in oil.

2. Roast to Perfection

  • Arrange slices in a single layer on the baking sheet — avoid overlapping.

  • Roast for 25–30 minutes, flipping halfway through.

  • The rounds should be tender inside with golden-brown, slightly crisp edges.

🔥 Optional: For extra caramelization, broil for 1–2 minutes at the end.

3. Add the Feta and Honey

  • Remove the rounds from the oven and transfer to a serving platter.

  • While still warm, top each slice with crumbled feta cheese.

  • Drizzle generously with honey so it melts slightly into the cheese.

💛 The warm potatoes soften the feta and blend beautifully with the honey.

4. Garnish and Serve

  • Sprinkle with fresh thyme or rosemary for a fragrant finish.

  • Add nuts or chili flakes for texture and flavor contrast.

  • Serve immediately while warm and melty.

Presentation idea: Arrange in a circular pattern on a white platter and drizzle extra honey right before serving.
