- 1/2 cup almond milk (unsweetened)
- 1/4 cup fresh lemon juice

- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup Greek yogurt (optional, for added creaminess)
- 1–2 tbsp maple syrup, honey, or stevia (to taste)
- Cooking spray or coconut oil for the skillet
