Instructions
1. Prepare the batter: In a large mixing bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla, cinnamon, nutmeg, pumpkin spice, and a pinch of salt until smooth.
2. Heat the skillet: Place a nonstick skillet or griddle over medium heat and add a little butter to coat the surface.
3. Dip the bread: Dip each slice of bread into the pumpkin mixture, making sure both sides are coated but not soggy.
4. Cook the toast: Place the soaked bread slices onto the hot skillet. Cook 2–3 minutes per side, or until golden brown and slightly crisp.
5. Serve: Stack the French toast, top with a pat of butter, a sprinkle of powdered sugar, and drizzle with maple syrup. Add whipped cream and extra cinnamon for the ultimate fall touch.
