Instructions
1. Mix the pudding base:
In a large bowl, whisk together milk, Greek yogurt, honey, lemon juice, lemon zest, vanilla, and salt until smooth.
2. Add chia seeds:
Stir in chia seeds and mix well. Let sit for 5 minutes, then stir again to prevent clumping.
3. Chill:
Cover and refrigerate for at least 4 hours (or overnight) until thick and creamy.
4. Serve:
Divide into jars or bowls. Top with whipped cream, berries, and a sprinkle of lemon zest for a fresh finish.
Notes
For the creamiest chia pudding, use full-fat coconut milk or add extra Greek yogurt. If you prefer a sweeter flavor, adjust the honey or maple syrup to taste. Always stir the chia seeds twice within the first 10 minutes to prevent clumping.
