Ingredients
4 large eggs
1 cup heavy cream
1/2 cup shredded Gruyère cheese
1/2 cup shredded sharp cheddar
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
1/2 cup caramelized onions
4 slices cooked bacon, crumbled (optional)
1 tbsp chopped fresh thyme
1 unbaked 9-inch pie crust
Instructions
1. Preheat oven to 375°F (190°C).
2. Blind bake the pie crust for 10 minutes with weights, then 5 minutes without.
3. In a skillet, sauté onions until golden and soft.
4. In a bowl, whisk together eggs, cream, salt, pepper, and nutmeg.
5. Fold in cheeses, onions, bacon, and herbs.
6. Pour filling into cooled crust.
7. Bake for 35–40 minutes or until the center is set but slightly jiggly.
8. Cool for 10 minutes before slicing.
9. Serve warm or at room temperature.
Notes
You can make this quiche vegetarian by omitting bacon and adding sautéed mushrooms or spinach.
Crustless option available for low-carb diets—just grease a baking dish and pour filling directly.
